Soulfood: Apple-Chocolate-Date Blondies



This Friday I needed a pick-me-up and ended up throwing all good things in a bowl. 
Instead of following a recipe, this was my first real freestyle cake and it didn't turn out too bad!
With some peanut butter and sliced strawberries on top and salted-caramel ice cream as a side, it was a pure success.

For one squared pan:

2 free range eggs
1 1/2 cup whole meal self-rising flour
1/4 cup brown sugar
1 1/2 tbs honey
3 tbs cottage cheese
2 tbs cinnoman
6 pitted dates chopped 
2 tbs chia seeds
1 grated apple
3 tbs dark chocolate chips

Preheat oven to 200°C. Start by mixing the eggs and brown sugar for approximately 5 minutes. Then add flour, honey, cottage cheese, and cinnamon. Then add the dates and grated apples. Last but not least, stirr in the chocolate chips and bake for 30-35 minutes.
